1. The Wok: Recipes and Techniques

I started working at New World Bistro in Albany NY in 2019. Here, I was first introduced to a Wok and Asian cooking techniques. Unfortunately, due to COVID-19 I was furloughed in 2020 then, fortunately moved to Virginia then Charleston to be with my AMAZING (she asked me to put that, but she is) girlfriend. I started working at KweiFei in spring of 2022 where I have been lucky to learn traditional Sichuan Chinese Food. We translate Chinese cookbooks from the Sichuan Region of China and use traditional techniques, with a modern twist, of cooking this delicious food. Here, I learned, first, the proper way to use a Wok, including a rocking technique and a paddle used for stirring. I also became fascinated with this cuisine and their traditions.
I learned about J. Kenji López-Alt from Milk Street Radio with Christopher Kimball. I was fascinated by his scientific approach and appreciation of the origin of Chinese Wok Recipes. The detailed approach to Wok cooking can be daunting but is very well explained in this book.

2. Gordon Ramasy makes it easy

While this book is not that random, as Gordon Ramasy is a household name thanks to Hell’s Kitchen and his many other media presences, it was one of the first cookbooks to be gifted to me as I started expanding my culinary journey at the age of 14. I know, SOOOO many people own this book and have tried to best Chef Ramsey, but I enjoy this book because his scrambled eggs are just damn good.
Ramsay’s take on scrambled eggs stands out as a true revelation in the world of breakfast delights. The eggs are a testament to his commitment to perfection even in the simplest of dishes. The method, outlined with precision in his cookbook, transforms this everyday breakfast staple into a velvety, indulgent masterpiece. The secret lies in Ramsay’s emphasis on using the freshest eggs possible, combined with a low-and-slow cooking technique that produces eggs with a creamy texture like no other.

In contrast, Chef Hereford is not afraid to use pre-made ingredients to make the most amazing combinations. In this cookbook, Hereford takes old recipes and makes them completely unrecognizably new again. The recipes are approachable yet adventurous, making them suitable for both seasoned chefs and enthusiastic home cooks.

Hereford is one of my favorites because he comes from a Michelin star restaurant in NYC, moved to New Orleans and is creating interesting and new foods for FUN! Cooking is supposed to be fun and innovative, and Hereford’s style is to take his professional knowledge and make cooking and food fun again. You have to try literally ANY of his recipes to enjoy something wild and Delicious.
