One thing that I tend to crave once in a while is shortbreads. And when that feeling hits, it is strong. It also comes with a whole ritual of coffee or tea and just sitting there taking it all in. This is my all time favorite shortbread recipe. There have been some modifications over time, but this is the final product. Plus some delicious strawberry jam because it is the heart of strawberry season around here.
Preheat the oven to 400°F. Set up your baking sheet with the parchment paper or silicone mat and set aside.
Knead all dry ingredients together with the butter until they are well mixed.
Lightly beat your eggs and then add them to the butter mixture. Mix together on a low speed until they are just combined so that you do not overwork the dough.
As soon as the dough is ready, shape the dough into about 20 golf ball size portions with your hands. Place them on the prepared baking tray. Now make an indentation with your thumb into each of them. Put a little dollop of jam into each of the indents.
Bake in the oven for about 10 minutes or until golden brown.
