Watermelon Salad

Ingredients

  • 4 cups watermelon diced
  • 2 cups cucumber diced
  • 1/2 cup lemon vinaigrette
  • 1/4 cup pepitas chopped
  • 1/4 cup fresh mint leaves

Instructions

  • Start by cutting the watermelon in half an then into one inch strips. Cut out the juicy red centers and then cut the melon into 1 inch cubes. Place them into a medium sized metal bowl.
  • Next, split the cucumber in half lengthwise and repeat with each half. Turn sideways and cut into 1 inch pieces. Add them to the metal bowl.
  • Add the lemon vinaigrette and toss lightly till everything is coated and let it marinate for 5 minutes.
  • Spoon into a bowl for serving and add the juices over the top. Sprinkle the mint leaves and chopped pepitas on top and enjoy!
