How to Make Coconut Rice: Simple and Flavorful Recipe

Coconut rice is synonymous with Caribbean cooking. There are countless variations not only in the Caribbean, but across the world in just about any island or oceanside cuisine. 

Because it is so common in these cuisines, it pairs well with pretty much any form of tropical cuisine you can think of. This makes this humble rice dish a very versatile one. And for those who do not love cilantro, you can always leave it out. I understand that all pallets are different and everyone is allowed to like what they like.

Wash your rice

For this dish, the main thing to remember is to wash your rice. If you do not cook with rice often then you may not know this. But you should always wash your rice before you cook it. To do so, you simply need to place the rice in a pot or dish and add water. mix the rice around for 30 seconds and strain off the water. Repeat this 3 more times or until the water is clear.

Rinsing rice removes the glutens on the grains. If you do not do this, the glutens will become sticky when cooking and stirring resulting in clumpy sticky rice. We want nice rice where you can actually see the individual grains and experience the full flavors and aromas.

Making the coconut rice

To start, place a medium sized sauce pan on the stove and add the washed rice, water, coconut milk, and salt. Turn the stove on to high heat.

Now allow the pot to come to a boil. Once boiling, stir and then reduce heat to low and cover. Cook for 15 minutes and then remove the pot from the heat.

Let the pot sit covered for 10 minutes before uncovering and adding the chopped cilantro. Fluff the rice with a fork while mixing in the cilantro. Serve.
