Quick and Simple Watermelon Salad

There are very few things that taste as fresh as a watermelon salad on a hot day. Watermelon is one of the absolutely most refreshing fruits there are. Hands down. So of course this salad incorporates many other fresh flavors. Cucumber, mint, and lemon help to round out this salad that is sure to be a hit.

The best part about this recipe is that it takes minutes to make. It can be thrown together on a whim. This makes it the perfect salad to throw together when you forget about that last minute party you get invited to. Or maybe you just want to round out a picnic with a savory side dish.

Blenders are a very useful tool in the kitchen. Wether it’s a standing countertop blender or a stick (immersion) blender, having one on hand is a game changer. Especially when making vinaigrettes and refreshing drinks!

Other options

  • Want a bit more tang and are obsessed with cheese, swap the vinaigrette for a balsamic and add mozzarella.
  • Or you may not be a fan of mint. Basil makes for a fantastic substitute in flavor to mint.
  • Want spice? Add some thin slices of Serrano peppers.

Making the Watermelon Salad

Start by cutting the watermelon in half an then into one inch strips. Cut out the juicy red centers and then cut the melon into 1 inch cubes. Place them into a medium sized metal bowl.

Next, split the cucumber in half lengthwise and repeat with each half. Turn sideways and cut into 1 inch pieces. Add them to the metal bowl.

Add the lemon vinaigrette and toss lightly till everything is coated and let it marinate for 5 minutes.

Spoon into a bowl for serving and add the juices over the top. Sprinkle the mint leaves and chopped pepitas on top and enjoy!
