Many jams and preserves are meant to hold something from its prime season of harvest well into the cold winter months. But some are meant to be enjoyed right then and there. This is one of those then-and-there recipes. It will last for up to 5 days in the fridge if it survives. It will freeze for a month.

Ball jars are a key item to have in any house. They allow you to store things for an extended period of time. And they also have their own aesthetic that’s pleasing to look at. I love to look in my fridge and see what’s still around from the last season.
There are 2 methods that I use when making a no stir jam. The first is to cut them into small pieces. Then let them sweat in the sugar and mash them with a fork. The second is to do the same as the first method with the addition of puréing a third of them. This is to smooth the texture out.
There are many uses for this recipe. Pair the strawberry jam alongside charcuterie to add sweetness to the salty, fatty, and sharp vinegars on the board. Put it on your morning toast alongside sausage and eggs. Or another fun one is to put it on top of ice cream on a warm day. Maybe add some mint too.

Making the strawberry jam
First, remove the stems and leaves from your strawberries by coring them at the top.
Then cut each strawberry into small pieces. The best method i have found for this is to cut them in half length wise. Then cut each half into thirds length wise before turning them to cut them into smaller pieces.
Next, place them into a metal bowl and add the sugar and salt.
Now, rest them for a half hour in the bowl.
At this time, take a fork and mash the strawberries until you reach your desired texture. Blend 1 third of the mash to make a smoother texture.
