There has always been a special place in my heart for apple crisp. It is a staple of New York in the fall and winter months.
We have enjoyed apple crisp as far back as I can remember. We have it multiple times a year when the orchards are ripe with a plethora of apples. And all the way till New Year’s Day. Maybe a bit afterwards depending on what is available and the mood/need to have it on a cold winters day.
One of my favorite things is to make an apple crisp and curl up to a Lord of the rings, or Harry Potter marathon. Or maybe a good book and some nice rainy or snowy weather. It is truly a comfort food. And you know, maybe a scoop of a favorite ice cream with it never hurt anyone.
There really is nothing like an apple crisp with fresh orchard apples in it. Honestly, if you don’t live near an orchard, any apple can help. This will make it an unforgettable treat during these cold months.
The recipe I am started with is the family recipe that I grew up with. My mom and I made some changes. I think these changes really made it better.
Now, to the good stuff. Remember to always start with your mis en place (See more here).
Directions For the Apples:
After establishing your mis en place and all your ingredients are ready, peel the apples and slice thinly. Next, place the apple slices into your mixing bowl. Add 1 teaspoon of cinnamon, ground nutmeg, and ginger powder each. Then, add 1/4 teaspoon salt. Lastly, pour 1 cup of warm apple cider into the mixing bowl.
Finally, mix gently to ensure all the apples are thoroughly coated. I typically use my hands, but you could use a rubber spatula or a wooden spoon. Set aside.
For the Streusel:
In separate mixing bowl, include 1 cup each of sugar and flour. Add 1/4 cup oats and 3/4 teaspoon salt. Stir. Cube the 8 tablespoons of cold, unsalted butter butter, cutting it into smaller easier workable pieces. Work the butter into the flour mixture using your hands, or a fork, until coarse crumbs form. Do not over work.
Now, oil or butter a 8” square or 9” x 13” rectangle baking dish. Finally, add the apples to the dish making sure they are well spread out. Next, cover apples with streusel evenly. At last we can place our apple crisp into the preheated oven. Then cook for about 1 hour. Remember to cover with foil if its getting too brown too early.
Finally, it is finished when you start to see nice, almost caramel-like bubbles moving around the edges. The topping should have a nice, lightly golden brown color to it.
This dish is delicious served warm but is honestly just as good eaten cold straight from the fridge out of the dish. Hopefully my girlfriend isn’t reading this and realizing that I’ve been eating it right from the fridge. Well all I can say is to enjoy what you have made however you wish!
It is always great to experiment with different flavors and profiles that other types provide. I have personally also enjoyed using Macintosh or honey crisp apples. Enjoy!
New York Style Apple Crisp
Ingredients
Ingredients for the Apples:
- 7 to 10 medium Apples your favorites, but I used Ginger Crisp and Gala
- 1 teaspoon cinnamon
- 1 teaspoon ground nutmeg
- 1 teaspoon ginger powder
- 1 cup apple cider warmed (or warm water)
- 1/4 teaspoon Kosher Salt
Ingredients for the Streusel:
- 1 cup white sugar
- 1 cup all purpose flour
- 1/4 cup oats
- 1/2 cup unsalted butter
- 1/2 teaspoon Kosher Salt
Instructions
- Preheat the oven to 350 degrees F.

I technically own a santoku knife (Japanese vegetable chef knife) of theirs, but it is able to do any task that I put it to. These knives are razor sharp and will cut with very little resistance as long as you keep up with keeping them sharp. They can dull easily if you do not pay attention to what you are doing.
